🦆🍜 Simply a paradise for duck lovers!

🦆🍜 This recently opened shop (July 21, 2021) is the second branch of the famous Hachioji ramen shop Kaede. While the main shop offers a well-balanced menu with various options, this branch focuses on duck (鴨: kamo) as its main theme. I visited again just a week after my previous visit because I couldn’t get the mazesoba out of my mind. I arrived at the shop just before the evening営業 (eigyou: business hours) started and was surprised to find that they now offer a set of otsumami (snacks) and an expanded selection of alcoholic beverages. I decided to stick to my original plan and ordered the mazesoba. The shop has a stylish interior, and I enjoyed watching the chefs prepare the food while I waited. The mazesoba is served in a large bowl, which makes it easy to mix the ingredients together. The thick, chewy noodles are made in-house, and the dish is topped with duck meat, spring onions, baby leaf, and onions. The sauce is a combination of soy sauce and duck oil, and it perfectly complements the duck meat. The duck is tender and flavorful, and the other ingredients add a nice balance to the dish. I highly recommend this mazesoba, and I’ll definitely be back to try the中華そば (chuukasoba: Chinese-style ramen) next time.

I’ve never had duck-based ramen until I tried this place, and now I’m hooked! The combination of the rich duck broth and the springy noodles is simply divine. The atmosphere is so inviting and elegant, and the owner is super friendly. Will definitely be coming back for more!

Bang for your buck!

I’m not a huge duck fan, but this place changed my mind. The duck maze-soba was so flavorful, and the portion size was super generous. I love that they have a wide selection of craft beer and sake too. The prices are a bit steep, but the quality and quantity make it worth it. Will definitely be coming back to try the tsukemen next time!
