Originally a borrowed space, it has become an individual store, and now it is one of the most popular restaurants in the Kan-nai area. It’s not “Nokan” but “Hekikan” (丿貫). It has expanded to stores in Yokohama and Yonago, Tottori, and there may be differences in details. There is a 暖簾分け (norenwake) store in Kisarazu, and there is also a former Fushi Niboshi (currently Uo Uo Men Sono) in Osaka. When I was working in Kan-nai, the first individual store opened in my sales area. Since then, until I left my parents’ house, I was a regular customer, and it is a special shop that I have been watching since it was a single store. That’s enough for the mysterious parent-like perspective that some freaks keep writing and get annoyed by. My first visit in two years was around 12:30 pm on New Year’s Day, a time when it would be crowded no matter how you think about it, and as expected, there was a long line. However, there is no recovery, so I just lined up obediently. My order was confirmed while I was in line. The default niboshi is good, but the original ramen using various ingredients that change irregularly is also irresistible. This time, I ordered the Red Zuwai Crab Ramen. The ominous menu item, Gout Hospitalization, is not a joke for those with gout, so I refrained from ordering it. Anyway, I entered the store in a little over an hour. Due to Corona, the area around the entrance is a bit cluttered, but the和風かつちょっと暗めの (wafuu katsu chotto kurame) space is still calming. As expected, there are no familiar staff. The bowl that was served had neat noodles, and the low-temperature chashu and green onions that were cutting-edge at the time stood out. As an Instagram-related problem, the picture is almost the same. I think it’s because of the strength of Yonago, where Sakaiminato is located, but the soup has a strong crab flavor, and originality is expressed on a solid foundation. The noodles are straight thin noodles. Niboshi’s image is patsu-style, but for this limited edition only, I was surprised to feel the density and chewy texture in the slender body. The ingredients include the eye-catching prosciutto-style pork shoulder. The moist texture and moderate saltiness make it a good palate cleanser. I wasn’t planning on eating again, but I couldn’t stop eating the Wae Tama. Inspired by sardine ahijo, this dish skillfully combines garlic, probably olive oil, and spices to achieve both noodles and ahijo. The intense impact when Niboshi first opened, when I had fewer opportunities to eat ramen than I do now, is gone, but it is still a joy that one of the things that made me addicted to ramen still exists as a popular store. I would like to create a day when I can come here to eat and drink sake during the evening hours again.
