I made a day trip to Hachioji on a whim at the end of the year. I love exploring ramen shops, but this area is a bit far, so I hadn’t had the chance to try it yet. But I knew it was a gold mine, so I came here to eat all day long. \u2061 My second expedition to Hachioji was to target the popular shops in the area. I had already covered the most important shops for Hachioji ramen last time, so this time I wanted to try out famous and popular shops in other genres. \u2061 First up was Wonchuu, a famous niboshi ramen shop in Hachioji. I think it was about two years ago when the first owner retired and the management changed. Since then, there have been mixed reviews, but there’s no doubt that it’s a long-established shop representing the area, and as a ramen lover, I wanted to try it at least once. \u2061 I arrived 30 minutes before opening and was the first in line. Even after opening, only about half of the seats were filled. I came too early. Of course, the staff asked me, ‘It’s 30 minutes before opening, you know?’ \u2061 Anyway, let’s pull myself together and focus on the ramen. They have four types of ramen: Usukuchi Niboshi Niboshi, Koukuchi Niboshi Niboshi, Aburasoba Niboshi Niboshi, and Niboshi Niboshi Tsukemen. Following the recommendation on the whiteboard in the shop, I ordered the Usukuchi Niboshi Niboshi. \u2061 The bowl that was served shortly after was a simple bowl with a clear soup and no fancy toppings. As expected, the soup is mainly made with niboshi (dried sardines), and you can enjoy a straight, unadulterated flavor. \u2061 The homemade noodles are straight, thin noodles with a firm, springy texture that gives me a sense of nostalgia. \u2061 The toppings are as expected, with the melt-in-your-mouth chashu and the soft menma. The unusual stem wakame has a unique texture when you bite into it, and its flavor adds an accent. \u2061 Overall, I would say that it is a well-made bowl of ramen, and I think it is the perfect choice for those who are looking for a classic ramen. \u2061<\/span><\/p>\n\n\n\n
